Paleo Cookies

2 cups raw honey

2 cups ground walnuts (you can use 3 cups)

4 cups blanched almond flour

1/2 tsp. nutmeg

1/4 tsp. ginger

1/2 cup chopped dried fruit (cranberries, mixed fruit, raisins, dates, etc.)


Preheat oven to 350 degrees. Lightly grease cookie sheets or use parchment paper. (I like parchment.)

Warm honey in a saucepan and let cool slightly.

Sift flour and spices.

Place warm honey in a mixing bowl. Gradually add flour mixture and stir until well blended. Stir in dried, chopped fruit.

Drop by teaspoonful on cookie sheets. Alternate method is to roll out dough to approximately 1/4 inch thick (it will be sticky and tough to handle), cut into squares and bake.

Bake 10-15 minutes. Enjoy!

These cookies keep almost forever in a sealed container. Over time, they become softer and chewier and better and better. Great for dunking in coffee or tea.
